No matter how expensive a knife is, if you neglect to take care of it, it will eventually lose its sharpness and become unusable.
However, by paying attention to a few small things every day, you can continue to use your knife with the same sharpness as when you first bought it.
Yamazaki Kiyoharu Shoten's knives are not mass-produced but are made by artisans, so they are less likely to lose their sharpness than other knives, and with proper maintenance they can be used for decades without losing their sharpness.
Please maintain it regularly to ensure it lasts a long time.

After washing, wipe dry and store upright.
Store your knives upright. If you store them horizontally, the moisture remaining in the handle will corrode the metal inside the handle. Storing your knives upright allows this moisture to escape.
Also, after washing the knife, even though it may be a hassle, try to wipe it dry with a dry towel to remove as much moisture as possible.
If rust appears, remove it as soon as possible. If the rust progresses, it will penetrate deeper and become more difficult to remove.

How to store it for a long time
To store knives that you don't use often, such as special-purpose knives, for long periods of time, you can wrap them in newspaper.
Before that, it is important to thoroughly dry the knife to remove all moisture, which is the enemy of rust. If possible, after it has dried, it is a good idea to leave it in the shade for another half day.
Wrapping it in newspaper also helps prevent the ink from rusting. It may be even more effective to use special oil before wrapping it.
